Seedling Cupcakes

After mentioning these cakes in the previous post, I had many requests for a recipe and instructions. Fear not, these cupcakes are quite simple and are a little taste of spring when there's a sub-freezing windchill outside! The cakes are also perfect for a spring or summer birthday, and would be fun for your pint-sized guests to "plant" themselves. 


Here's what you need:

1. 4-ounce canning jars (I used Ball's quilted jelly jars). They usually run about $10 per dozen depending on where you purchase them. That might sound expensive if you need 24, but remember you can reuse them endlessly. 

2. Your favorite cake recipe. I used my chocolate cupcake with peanut butter frosting recipe.

3. Butter or non-stick cooking spray, to grease the jars.

4. A jelly roll pan or cookie sheet.

5. Chocolate cookies or wafers. I used Newman's Own Organics Double Chocolate Chip Cookies - YUM!

6. A toothpick, or something similar, to help you "plant" your seedlings.

7. Edible herbs or flowers. I chose mint since my options were limited last winter when I baked the cakes. A variety of herbs or flowers would be awesome, especially in the summer when you have so many choices.

8. Popsicle sticks, optional. The sticks allow you to personalize the cakes and make them look more like seedlings. I wrote "Happy" and "Birthday" on mine. Writing the recipient's birthdate as you would a planting date would look cute as well.

Mixed Berry Bars

What better way to enjoy summer berries than to sandwich them between a sweet, buttery crust? These mixed berry bars (raspberry, blueberry, blackberry) are sweet but tart, and delicious chilled.

Unfortunately, the busy first few weeks of school have kept me away from the blogging world and this recipe is coming to you in the early days of autumn. But if you're like me, you have bags of berries that you picked all summer in your freezer, just waiting for an opportunity to be showcased. Frozen berries from the supermarket will also work or you can simply daydream about making berry bars until next summer.


My boyfriend loves mixed berry pie, so when he hosted a bbq in late August, we couldn't think of a better dessert. With little time to perfect a pie crust and filling, however, I decided that bars would be quick to make and easy to enjoy (no plate or fork needed!). I searched and searched the baking blog world and found several recipes for berry bars before settling on smitten kitchen's blueberry crumb bar recipe. Many bakers whip up similar desserts with a granola crust in an attempt to make a breakfast-worthy bar. I was searching for that berry pie taste and had faith that Deb's buttery crust would be a success.

Cheese Crackers

Things I don't like: spiders, getting out of a hot shower, spicy food.

Things I like: sunshine, vegetable gardens, cheesy snacks.

Maybe it seems crazy to make your own crackers, but how wonderful to be able to count the ingredients in this recipe on one hand. You can't do that on a Goldfish box. These crackers are great to make with kids on a rainy day or lazy Sunday afternoon. They are also great for you, if a multi-step recipe often ends in disaster.


The crackers puff up nicely, so don't be shy about rolling the dough thin. I didn't have any problems with the crackers burning. Have fun with cookie cutters, or simply cut the dough into squares with a pizza cutter. Or even spell out a cheerful message to your best friend when they're feeling blue (cheese has healing powers).
